Bulgarian state standards mandate a minimum 47% ABV, making it one of the strongest anise spirits in Europe. Made by rectifying essential oils from star aniseed with distilled alcohol, natural anise oil and sugar — chilling produces a signature crystallisation effect as anise compounds form delicate crystals in the liquid. Vinprom Peshtera, running since 1939, is the benchmark producer. Served very cold, ideally frozen, as an aperitif with meze, tomatoes, cucumbers and sweet melon or watermelon.
