Dyulova Rakia (Quince)

Quince rakia, most closely associated with the Isperih region in the northeast, alongside Troyan and Sliven. Quince is one of the less commonly used fruits in Bulgarian rakia, prized for its intensely aromatic, floral, honeyed character; barrel-aged versions pick up vanilla and a light smokiness from the oak without losing the quince underneath.
